Chanterelle mushrooms come in a wide range of colours, from orange and yellow to even white and blue. The most commonly used variety is the golden or yellow Chanterelle. The caps of these mushrooms are funnel-shaped with forked gills on the underside that run all the way down its stalk. As meaty mushrooms, with a fruity smell and peppery taste, Chanterelles are excellent food mushrooms and provide significant flavour to many recipes. When added to a dish, they reduce the need for strong herbs and spices, such as garlic, which may compete with the mushrooms' flavour.

Lobster mushrooms grow wild in the Pacific Northwest and are generally found along trails and beneath trees covered in leaves and needles. The season for Lobster mushrooms can start as early as July and run into October, depending on the weather.

European Chanterelles are now arriving. Slightly smaller and lighter in color than the North American variety, which we typically carry, but equally flavourful and versatile for use in your favourite recipes. The North American variety are available August - December so this will allow the discerning chef an opportunity to use this unique mushroom more commonly. |

Fresh Morels from BC can be picked anywhere from March until July, however the availability depends on the weather conditons. They are hand picked in locations previously burned by forest fires. They are unlike any other wild mushroom with a nut-like meaty flavour. They are very aromatic and versatile. Try them stuffed or add them to your favourite dish.
